Eggplant Lasagna

Go meatless one night this week and enjoy this vegetarian option that may replace your favorite dinner. You can serve with a big salad and a glass of red wine. Eggplant is an amazing vegetable that must be cooked to enjoy and can be enjoyed a variety of different ways.

Our Chef Danny is not a vegetarian but loves to go rouge in the kitchen when creating new recipes. You have to be quick when writing the recipes down from him or else you get lost in the deliciousness. Thank you Danny for this delicious creation.
Eggplant Lasagna

Makes 9 squares
Ingredients

1 eggplant, paper thin sliced rounds

2 tomatoes, thinly sliced rounds

3 garlic cloves, diced

1/2 cup basil, roughly chopped

1/2-3/4 of a jar of marinara sauce (homemade or store bought)

1/4 cup goat cheese (or cashew cheese for vegan option)
