1 eggplant, paper thin sliced rounds
2 tomatoes, thinly sliced rounds
3 garlic cloves, diced
1/2 cup basil, roughly chopped
1/2-3/4 of a jar of marinara sauce (homemade or store bought)
1/4 cup goat cheese (or cashew cheese for vegan option)
