I’m back from Australia! I’m hopefully going to Germany in the next few weeks, but at the moment I’m hiding from the bitterly cold British spring weather and eating way too many snacks. In an attempt to be healthy and not undo all my weight loss under the fabulous Australian sun, and also to fight off the jetlagged cold that’s been chasing me all week, I made a salad. I normally find salad quite boring, but the nuts and seeds give it a crunchy taste and add extra protein and healthiness!
What you need: extra virgin olive oil, lettuce, your choice of greens (I.e rocket, spinach etc), a few handfuls of green olives, chopped cherry tomatoes, seeds (pumpkin, sunflower, linseed), walnuts, chopped Halloumi (optional), a chopped yellow or red pepper, chopped cucumber (as much as you like), two source pans or one pan and one mixing bowl.
Spices: salt, pepper, chilli flakes, oregano, herbs de Provence, a dab of balsamic vinegar
1. Add a little olive oil to both pans/mixing bowl. Add the greens, finely chopped the vegetables, add the seeds, nuts and olives and season. Give it all a good stir and drizzle with more olive oil and a little balsamic vinegar.
2: Heat olive oil in a small sauce pan. Chop Halloumi (I like quite small pieces) and fry on a medium heat for about five minutes/ till the cheese has turned a lovely golden colour. Stir regularly and season with oregano, salt and pepper.
3: Add the cooked cheese and stir thoroughly. Add some more salt and pepper and enjoy whilst feeling healthy and skinny.
