I’m on a bit of an aubergine kick at the moment, I can’t get enough of the things. This meal was really easy (and cheap) to make and I’m pretty happy with it, if you have any fresh tomatoes (I didn’t) feel free to throw some of them in as well.
What you need: A purple aubergine, a yellow pepper, green olives, sun dried tomatoes, fresh basil, olive oil, spaghetti (mine was 20 pence and tasted exactly the same any expensive brand spaghetti I have ever had)
Spices: Chilli flakes, chilli powder, paprika (optional), Italian mixed herbs, salt
1: Chop the aubergine and fry it in some olive oil. Aubergines tend to absorb oil really quickly, so keep an eye on them and add oil when needed. Add some salt as well and after you’ve been frying for a bit add some chilli flakes, chilli powder,paprika and Italian seasoning
2: Stir frequently and fry until the aubergines begin to brown, then turn to a low heat and leave for a few minutes
3: Add the chopped pepper and fry for about five minutes, make sure to stir frequently so nothing gets burned and add some more spices but don’t go crazy with the chilli (as I sometimes do)
4: Boil spaghetti as per cooking instructions and turn vegetables to a low heat
5: Add some green olives, chopped sun-dried tomatoes and a few fresh basil leaves
